Tarragon Baked Sheep’s Yogurt with Fresh Berries & Sorbet

A beautifully light dessert with delicate herbal notes and a creamy finish. My Tarragon Baked Sheep’s Yogurt is all about balance – combining rich sheep’s yogurt with infused tarragon cream for something that feels elegant yet incredibly simple.

Served with fresh berries and a refreshing sorbet, this is the kind of dessert I love creating during the summer months. It’s fresh, refined and lets a handful of quality ingredients do all the work. Lightly baked until just set, the texture stays silky and soft with the perfect gentle wobble.

Simple cooking… done well.

Tarragon Baked Sheep’s Yogurt

Serves: 10
Prep time: 25 minutes (+ 24 hours infusing time)
Cooking time: 1 hour


Ingredients

  • 800g Carnation milk
  • 800ml cream
  • 1 bunch fresh tarragon, chopped
  • 800g sheep’s yogurt

Method

1) Infuse the Cream

Gently heat the cream in a saucepan before adding the chopped tarragon.

Stir through the Carnation milk and pour the mixture into a container.

Cover and leave to infuse in the fridge for 24 hours to allow the flavours to fully develop.

2) Prepare the Yogurt Mixture

Strain the infused cream mixture to remove the tarragon.

Fold through the sheep’s yogurt gently until smooth and fully combined.

3) Bake the Yogurt

Pour the mixture into baking dishes or moulds.

Bake at 60°C for approximately 1 hour until the mixture is lightly set but still has a slight wobble in the centre.

4) Chill & Serve

Allow to cool completely before transferring to the fridge to chill fully.

Serve with fresh seasonal berries and a light sorbet for the perfect summer dessert.

✨ Chef’s Tips from Eoghan

✅ Don’t overbake — the slight wobble is what keeps the texture silky and delicate.
✅ Infuse overnight — allowing the tarragon to sit overnight creates a much softer, more rounded flavour.
✅ Keep it seasonal — fresh berries work beautifully, but stone fruits are also excellent in summer.
✅ Serve chilled — this dessert is at its best cold and refreshing straight from the fridge.
