Fresh, Crisp & Full of Flavour — Tuna Niçoise Salad
A good Tuna Niçoise Salad should feel fresh, balanced and effortless – and that’s exactly what I wanted from this version.
Crisp baby gem, golden crispy potatoes, soft-boiled egg and perfectly seared tuna come together to create a dish that’s light enough for summer while still feeling satisfying and full of flavour.
For me, this is the kind of food that works any time of day – relaxed lunches, outdoor dining or simple dinners shared with friends.
Fresh ingredients, cooked simply, always speak for themselves.
Tuna Niçoise Salad

Cooking time: 20 minutes
Ingredients
- 125g freshly cooked or high-quality store-bought tuna
- 2 tbsp olives, chopped
- 1 tbsp sun-dried tomatoes
- 4 baby potatoes
- 1 head baby gem lettuce
- 1 soft-boiled egg
- Extra virgin olive oil
- Sea salt to taste
Method
1) Prepare the Vegetables
Trim the root from the baby gem and gently separate the leaves.
Wash thoroughly and dry well.
Cook the baby potatoes in gently simmering water until soft throughout.
Cut into bite-sized pieces and fry in oil until golden and crispy.
Drain and season lightly with sea salt.
2) Cook the Egg
Place the egg into cold water and bring to a simmer.
Cook for 5½ minutes before cooling and peeling.
3) Sear the Tuna
If using fresh tuna, sear in a hot pan for approximately 45 seconds on each side, keeping the centre tender.
Allow to rest briefly before slicing against the grain.
4) Assemble the Salad
Toss the lettuce, olives and sun-dried tomatoes together with olive oil and a pinch of salt.
Arrange onto a plate and top with the crispy potatoes, soft-boiled egg and sliced tuna.
Finish with another drizzle of olive oil before serving.
