Perfect American-Style Pancakes
Serves: 4–6
Prep time: 15 minutes (+ 1 hour resting)
Cooking time: 15–20 minutes
Ingredients
- 250g plain flour
- 45g caster sugar
- 8g baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 free-range eggs
- 1 tsp vanilla extract
- 75g butter, melted
- 425g buttermilk
- Vegetable oil (for cooking)
Method
1) Mix the Dry Ingredients
In a large bowl, whisk together:
- flour
- sugar
- baking powder
- baking soda
- salt
Make sure everything is evenly combined.
2) Mix the Wet Ingredients
In a separate bowl, whisk together:
- buttermilk
- eggs
- vanilla extract
3) Combine
Pour the buttermilk mixture into the dry ingredients.
Mix gently until just combined — don’t overmix. A few small lumps are perfectly fine.
Check the consistency: the batter should be thick but still pourable. If needed, add a splash more buttermilk.
Fold in the melted butter.
Leave the batter to rest for at least 1 hour. This step makes all the difference for fluffy pancakes.
4) Cook the Pancakes
Heat a frying pan over medium heat and lightly grease with vegetable oil.
Using a ladle, pour the batter into the pan.
Work with 3–4 pancakes at a time.
Cook until:
- bubbles appear on the surface
- the edges look set and golden
Flip gently using a flat spatula and cook the other side until golden brown.
If they’re browning too quickly, reduce the heat slightly.
Repeat until all the batter is used.
